Hi y’all! It’s been a while since I shared a tasty recipe, so I thought I would post a super tasty and surprisingly easy stuffed squash meal today. It’s super tasty, very healthy and surprisingly satisfying for lunch or dinner.
What I like about this recipe is that you get both your protein AND your veggie fix, and the total prep and cook time should really only take you 30-40 minutes. (YAY!)
I actually found this recipe through Autumn Calabrese, the creator of the 21-Day Fix. She did a video tutorial with Jessie Jane (who runs the Lilyshop Blog), and since my mouth was watering after watching it, I gave it a shot with a little tweak to make it my own! Winner winner, pork chop dinner!!!
Any time ALL of my boys tear something UP, I HAVE to share it with my friends because it RARELY ever happens that all five of them love the same thing!! This is a FAMILY WINNER!! Continue reading “Italian Panko Crusted Pork Chops”
‘Tis the season for outdoor parties, grill-outs and summer FUN!
If you’re anything like me, I absolutely LOVE to get together with friends – cutting up and laughing, there really isn’t much else better to me!
And it seems that there is ALWAYS food involved — especially for me since I tend to eat every few hours anyway. I don’t want to go long without having something to eat!
But I also don’t always want to indulge. It has its time and its place, don’t get me wrong — I try to keep it to a minimum!
So I want to share an awesome, easy (that’s my middle name), healthy summer party recipe with you!

While winter doesn’t exactly tend to hit us all that hard where we live, I know a good deal of y’all are dealing with yet another round of snow.
Even though spring’s around the corner, I thought I’d put a little encouragement out there for makin’ it through this last stretch of bitter coldness.
When it’s frigid outside, I know my first inclination is to reach for hearty, filling, warm-me-to-my-bones food. Unfortunately, a lot of that said same food is the type that can also stick to your ribs like my mama’s good-home cooking.
Since I got some awesome feedback from the chicken casserole recipe I posted a few weeks ago, I thought this would be an opportune time to also send another hearty yet healthy recipe your way.
